Creamy amadumbe and basil pesto mash

Celebrate Africa Day with a creamy pesto mashed amadumbe for a colourful, fun twist on good old mash.

Ingredients (5)

500 g amadumbe
200 ml full cream milk
100 ml cream
3 tbsp basil pesto
salt and black pepper — to season

Peel the skin off the amadumbe and place them in a salt bath for a good 20 minutes. (This process helps to reduce the starch.)

Boil amadumbe for 30–45 minutes until soft.

Leave to cool down before you mash them.

Place in a bowl and mash them until smooth.

Mix in the cream, pesto and milk and continue mashing until smooth.

Season with salt and pepper, then serve.
