Inspired by pesto, this avo pesto pasta offers a budget-friendly, nut-free twist. Creamy avocado blends seamlessly with traditional pesto flavours, creating a luxurious sauce that coats every strand of pasta.

Ingredients (9)

1 cup fresh basil
1/2 cup water — divided
2 tbsp fresh lemon juice
1 tsp lemon zest
2 garlic cloves
1 large ripe avocado
1/2 tsp sea salt — plus more to taste
1/2 cup parmesan cheese — grated, plus extra for serving
1/2 packet tagliatelle — or any pasta of choosing, cooked

Method:

Add the basil, ¼ cup water, lemon juice, and garlic to a blender or food processor. Blitz until the mixture looks relatively smooth.

Next, add the avocado, sea salt, and Parmesan cheese blitz again until smooth and creamy. Taste the sauce and add extra salt, if desired. Adjust the consistency with the remainder ¼ cup or water, if desired.

Spoon the avocado pesto sauce over freshly cooked pasta and serve warm. Leftovers can be stored in an airtight container in the fridge for up to 48 hours without browning too much.
