|4 tbsp||smooth apricot jam — melted|
|1 tbsp||olive oil|
|1 tsp||fresh garlic — crushed|
|2 tbsp||balsamic vinegar|
|1 tbsp||fresh thyme|
Heat a cast-iron or griddle pan until piping hot, add a drizzle of olive oil and sear the Kassler steaks until you get lovely, charred bits or grill lines on both sides and until the meat is almost done.
Mix the apricot jam, olive oil, balsamic vinegar, garlic and thyme together and brush over the meat. Reduce the heat and gently fry the meat for a few more minutes until sticky and glossy.
Serve with crispy potatoes and charred greens.
