Spinach, potato and cheddar sauce purée
|1 cup||baby spinach|
|1 tbsp||cheddar cheese, grated|
Peel the potato and chop into 2.5cm pieces.
Steam the potato until soft (approx. 15 minutes).
Steam or fry the spinach until wilted.
Make a cheese sauce using the butter, milk and cheddar.
Add the cheese sauce to the potato and spinach and blend until coarsely puréed.
