Rice paper lunch wraps

Ingredients (12)

1/2 box Fry's Chicken-style strips
rice paper wraps
1/2 bag rainbow slaw mix
1 small bag lettuce
1 avocado — sliced into strips
carrots — optional, grated
red peppers — optional, cut into strips
1/3 cup mayonnaise
crispy onions — optional
soy sauce — for the dressing and for drizzling
1 tsp chilli oil — or to taste

Fry the strips into a frying pan with some oil until golden brown.

Place all the ingredients into bowls in front of a chopping board.

Get a large shallow bowl of warm water about the size of a dinner plate place it next to your work surface.

Take a rice paper wrap and soak it in the warm water for about 30 seconds.

Take the rice wrap out and place it on the work surface.

Spread a spoon of mayonnaise down the middle of the wrap from left to right about 10 cm long.

Along the same line place each of the ingredients neatly.

Once you’ve layers all the ingredients together, add a small drizzle of soy sauce and a squeeze of fresh lime juice and then wrap the rice paper wrap up taking the closest edge and folding it over and away from you and tuck it into the filling rolling as you go. Once you’ve rolled it half way grab the left and right ends of the wrap and fold them into the wrap before rolling the wrap up tightly.

Cut in half and place in a lunch box.

Repeat until you have your desired number of wraps.

To make the dipping sauce stir together the soy sauce, chilli oil and a squeeze of fresh lime juice and place in a jar with a lid. Or make a creamy dressing my mixing the soy sauce with some mayo and a squeeze of fresh lime juice.
