Lamb meatballs and tahini pita breads

Ingredients (16)

For the lamb meatballs
500 g lamb mince
2 spring onions — chopped
1 tsp ground cumin
1 tsp fresh garlic — crushed
salt and black pepper
olive oil
For the tahini sauce
1/4 cup tahini
2 tbsp fresh lemon juice
1/4 cup water
salt and black pepper
To serve
1/4 cucumber — cubed
1 handful radishes — quartered
bell peppers — any colour variety of your preference, finely diced
1 handful rosa tomatoes — quartered
1 handful fresh rocket leaves
4 pita breads — toasted

Method:

Mix the ingredients for the meatballs together and then roll into small round balls. Set aside in the fridge.

Mix the cucumber, tomato, radish and bell pepper together, season with salt and black pepper and set aside.

Make the tahini sauce by mixing all the ingredients together, adjust the water to achieve your desired saucy consistency.

Fry the meatballs off in a hot pan with the olive oil, ensure the are nice and brown.

While the meatballs are cooking, heat the pita breads.

Half each pita bread, stuff with rocket and fresh salad. Top with meatballs and tahini sauce. Enjoy while warm.
