|1/2 cup||cheddar cheese — grated|
|1 handful||baby spinach|
|1/4 tin||Rhodes Quality Chopped and Peeled Tomatoes|
Preheat an air fryer to 160°C. Grease a small cake tin with butter or cooking spray or line with baking paper.
Combine all the ingredients in a mixing bowl, except for the spinach and tinned tomatoes.
Scatter a few spinach leaves in the prepared cake tin, top with half the egg mixture. Top with spinach followed by the remainder of the egg mixture. Top with dollops of tinned tomato.
Air fry for 25 minutes, or until the frittata is set.
Serve and enjoy.
