Here are 5 breakfasts that you can make in advance and that reduce the morning chaos we often fall prey to.
1. Chia breakfast pudding
This breakfast idea has been trending on Pinterest for a few months now and we can see why. Chia seeds are SUPER healthy – they have a high protein content, stacks of fibre and loads of antioxidants. Even though it’s called a pudding – the description is really just a reference to the soft, creamy pudding-like texture that it has. Chia seeds can absorb up to 10 times their weight in liquid.
2. Tomato, ham, spinach and ricotta frittata
These can be eaten warm, cold or at room temperature which means you can make it the night before, portion it and store in an airtight container in the fridge until morning. If you don’t even have time to eat at home, take it along with you to work and enjoy it at your desk.
3. Granola bars
These are loved by kids! But there’s nothing stopping adults from munching them too. They’re packed with superfoods and can also be easily transported for those days when you’re on-the-go!
4. Bircher muesli
Also called “overnight oats” because all you need to do is soak the oats in some liquid and set aside in the fridge for a few hours. The next morning, just stir in a blob of Greek yoghurt and add your toppings for a creamy, chewy, healthy start to the day. It couldn’t be easier!
5. Nutty courgette loaf toast
This is one that you Banting folk will love. Simply make the loaf the day or night before and then slice the whole thing up. Keep the slices in the freezer and each morning simply take out 1 or 2 to pop in your toaster. Go wild with whatever topping you choose.
