Chia breakfast pudding

Trending circa 2015: Chia seeds can absorb up to 10 x their weight in liquid; the end result is a little chewy and great for absorbing other flavours.

Ingredients (3)

6 chia seeds
1 coconut milk — tinned, lite
fruit — coconut blossom sugar or fruit and nut seed mix for the topping

Method:

Place the chia and milk in a glass jar, and stir until the chia seeds are evenly mixed into the milk (clumps can form).

Place in the fridge overnight.

Serve, topped with fresh fruit, coconut blossom sugar, or fruit and nut seed mix.

Serves 2 – 4, depending on portion size
