Best tomato sauce

    olive oil

    2-3 garlic cloves, chopped

    2 onions, chopped

    3 cans (400 g each) chopped, peeled tomatoes or 1.2 kg peeled and chopped fresh tomatoes

    salt and freshly ground black pepper

    fresh oregano, chopped

    fresh basil leaves, chopped

    fresh parsley

    brown sugar

Method

Heat the olive oil in a saucepan over medium heat and sauté the onion for 3-4 minutes, stirring occasionally until the onion is soft. Add the garlic and sauté for another 1-2 minutes or until the flavour of the garlic has developed. Add the tomato and season with salt and pepper. Bring to the boil, reduce heat and simmer gently for 1 hour, stirring frequently. Add the herbs and sugar and simmer for another 10 minutes. Adjust the seasoning if necessary.
