Ingredients (14)

Dressing
2 tbsp Dijon mustard
2 egg yolks
1/4 cup tomato sauce
2 tbsp Worcestershire sauce
3/4 cup grapeseed oil
Tabasco sauce — to taste
extra salt and pepper — to taste
Tartare
220 g beef fillet — or wallaby fillet if available
2 tbsp capers
2 tbsp shallots
1 tbsp chopped parsley
2 tbsp gherkins
1 tbsp chives
To serve
1 bread loaf

Method:

  1. Combine egg yolks, mustard, tomato sauce, Worcestershire sauce, grapeseed oil in a bowl. Store in a cool place.
  2. Dice the meat with a sharp knife into small cubes, about 0.5cm x 0.5cm.
  3. Combine the meat and the finely chopped herbs.
  4. Combine the dressing and the meat mixture.
  5. Slice the bread loaf and toast on a grill or over a fire on high heat until toasted and slightly charred.
  6. Top each slice of bread with some tartare. Serve immediately.
