Small batch gluten-free banana bread
|1||ripe banana — mashed|
|1/4 cup||oil — or melted butter|
|1/2 cup||white sugar|
|2 tbsp||treacle sugar|
|1/2 tsp||vanilla essence|
|1/2 cup||gluten-free flour|
|1/2 cup||dessicated coconut|
|1/2 tsp||baking powder|
|1/2 tsp||bicarbonate of soda|
Mix the mashed banana, oil, egg, sugar and vanilla together.
Add all the remaining dry ingredients, mix to combine.
Air fry in a small loaf tin lined with baking paper at 150C for 20 minutes and then 160C for 10 minutes or until cooked and golden, a skewer will come out clean. (Or bake at 180 for about 25-30 minutes in an oven).
Leave to cool and then serve with lots of butter.
You can easily substitute the 1/2 cup gluten-free flour mix for 1/2 cup cake wheat flour for a version that is not gluten-free.
