Small batch gluten-free banana bread

Perfect for those times when you only have one very ripe banana lying around at home! This recipe makes one small loaf.

Ingredients (11)

1 ripe banana — mashed
1/4 cup oil — or melted butter
1 egg
1/2 cup white sugar
2 tbsp treacle sugar
1/2 tsp vanilla essence
1/2 cup gluten-free flour
1/2 cup dessicated coconut
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1 pinch salt

Method:

Mix the mashed banana, oil, egg, sugar and vanilla together.

Add all the remaining dry ingredients, mix to combine.

Air fry in a small loaf tin lined with baking paper at 150C for 20 minutes and then 160C for 10 minutes or until cooked and golden, a skewer will come out clean. (Or bake at 180 for about 25-30 minutes in an oven).

Leave to cool and then serve with lots of butter.

Notes

You can easily substitute the 1/2 cup gluten-free flour mix for 1/2 cup cake wheat flour for a version that is not gluten-free.
