A mix of classic roast vegetables with a balsamic glaze filled golden puff pastry tartlets that are super affordable and easy to make. Brought to you by McCain.

Ingredients (6)

1 packet McCain Roast Vegetable Mix
ready-made puff pastry
100 g chevin
2 tbsp lemon juice
1/4 cup fresh herbs — chopped
salt and black pepper

Prepare McCain Classic Roast Vegetable Mix according to instructions on packet

Line greased tart cases with ready rolled puff pastry, place onto an oven tray and set aside.

In a bowl, whisk the goat’s cheese together with the lemon juice and salt and pepper.

Stir in the chopped fresh herbs and then transfer to a piping bag.

Pipe the goats cheese mix into the prepared tart cases before spooning in the McCain Classic Roast Vegetable Mix.

Bake tarts in the oven for about 20-25 minutes at 180℃ until pastry is golden brown.

Remove tarts from baking tray and place onto a serving platter.

Pipe a bit more goats cheese mix onto the tarts and garnish with some fresh herbs.

Serve and enjoy!
