Prepare McCain Classic Roast Vegetable Mix according to instructions on packet
Line greased tart cases with ready rolled puff pastry, place onto an oven tray and set aside.
In a bowl, whisk the goat’s cheese together with the lemon juice and salt and pepper.
Stir in the chopped fresh herbs and then transfer to a piping bag.
Pipe the goats cheese mix into the prepared tart cases before spooning in the McCain Classic Roast Vegetable Mix.
Bake tarts in the oven for about 20-25 minutes at 180℃ until pastry is golden brown.
Remove tarts from baking tray and place onto a serving platter.
Pipe a bit more goats cheese mix onto the tarts and garnish with some fresh herbs.
Serve and enjoy!
