Pear, walnut and blue cheese tortilla pizza
With crunchy walnuts and fresh rocket.
|1||tortillas — Mexican, flour|
|olive oil — for brushing|
|1 handful||parmesan cheese — shavings|
|1||pork — Coppa|
Preheat the oven to 200°C. Brush the tortilla’s with olive oil.
Grate a light dusting of pecorino or Parmesan over the base. Scatter small chunks of blue cheese fairly liberally over and arrange a few very thin slices of pear around.
Tear up 2 slices of coppa ham place on top of the cheese.
Bake for 4 – 5 minutes until the edges are just starting to brown and all the cheese has melted.
Sprinkle over chopped walnuts and fresh rocket.
