An air fryer-friendly lunch and quickie dinner option to prepare just before loadshedding hits!

Ingredients (12)

350 g Eskort Mini Frikkadels
1 tsp ground cumin
1 tsp fresh rosemary — chopped
1 tsp paprika
1 tsp lemon zest
3 tbsp olive oil
1/2 cup sundried tomatoes
4 panini rolls
salt and black pepper
1/2 cup cucumber — diced
1 cup plain double thick yoghurt
1/4 cup fresh mint leaves

Preheat air fryer to 180C. Cook Frikkadels for 10min or until golden and crispy.

Place cumin, rosemary, lemon zest and sundried tomatoes in a food processor or blender. Add 3 tablespoons of olive oil and blend until a smooth paste forms.

Add the paste to the frikkadels, mix through.

Season with salt and pepper.

Lightly brush paninis with olive oil and air fry for 5 mins until golden.

Combine all the tzatziki ingredients in a bowl and mix together.


Serve the meatballs on toasted panini bread.

Add tzatziki and garnish with fresh mint leaves.
