|350 g||Eskort Mini Frikkadels|
|1 tsp||ground cumin|
|1 tsp||fresh rosemary — chopped|
|1 tsp||lemon zest|
|3 tbsp||olive oil|
|1/2 cup||sundried tomatoes|
|salt and black pepper|
|1/2 cup||cucumber — diced|
|1 cup||plain double thick yoghurt|
|1/4 cup||fresh mint leaves|
Preheat air fryer to 180C. Cook Frikkadels for 10min or until golden and crispy.
Place cumin, rosemary, lemon zest and sundried tomatoes in a food processor or blender. Add 3 tablespoons of olive oil and blend until a smooth paste forms.
Add the paste to the frikkadels, mix through.
Season with salt and pepper.
Lightly brush paninis with olive oil and air fry for 5 mins until golden.
Combine all the tzatziki ingredients in a bowl and mix together.
Serve the meatballs on toasted panini bread.
Add tzatziki and garnish with fresh mint leaves.
