Lemony chickpea and mixed vegetable orzo soup

Ingredients (12)

15 ml olive oil
1 small onion — chopped
2 carrots — chopped
2 garlic cloves — crushed
1 – 1.5 l vegetable stock
1 x 410 g tin Rhodes Quality Chickpeas in Brine — drained and rinsed
1 x 410 g tin Rhodes Quality Mixed Vegetables — drained and rinsed
250 ml orzo pasta
zest and juice of 1 lemon
125 ml cream
salt and freshly ground black pepper
45 ml fresh flat-leaf parsley

Method:

Heat the oil in a large saucepan.

Add the onion and carrots and cook until softened.

Add the garlic and fry for a few minutes more.

Add 1 litre of the vegetable stock and bring to a low simmer.

Add the Rhodes Quality Chickpeas and the Rhodes Quality Mixed Vegetables and return to a low simmer.

Stir in the orzo and cook for about 20 minutes, until tender, stirring occasionally and adding extra vegetable stick if the soup becomes too thick.

Stir in the lemon zest, juice and cream. Heat until warm, then season to taste.

Stir in the parsley and serve.
