Lamb ribs with zucchini fries

Method:

Preheat an oven to 170 °C.

Rub the ribs with lemon juice and olive oil. Season with lamb rub, salt and black pepper.

Evenly space the ribs in a single layer on baking rack, roast for 35 minutes or until tender and cooked through.

While the ribs are roasting, prepare the zucchini fries.

Cut the zucchini into sticks (like fries).

In a shallow bowl, combine the almond flour/coconut flour, Parmesan, paprika and season with salt and black pepper. Mix to combine.

Dredge zucchini in egg and then into the flour mixture and place on a baking sheet. Generously spray with coconut oil cooking spray.

Working in batches, place the zucchini in a single layer in an air fryer, cook for 10 minutes at 180 °C or until crisp or baking in an oven at 180 °C for 20 minutes until golden and crisp.
