Ingredients (6)

For the lime-and-gin sorbet
310 ml water
250 ml castor sugar
3 limes
20 ml Hendrick's Gin
150 ml pink tonic — or rose-flavoured sparkling water
50 ml Hendrick's Gin

Method:

To make the lime-and-gin sorbet:

Pare off the rind of one lime. Place the water, castor sugar and rind in a small pot. Bring to the boil, then leave to simmer for 15 minutes. Remove from the heat, remove the rind, and leave the sugar syrup to cool. Once cooled, add the Hendrick’s Gin and the juice of three limes. Pour the mixture into an ice-cream maker and set according to the manufacturer’s instructions for a sorbet. Transfer the sorbet to a freezer-safe container and freeze until solid and ready to use.

To assemble, combine Hendrick’s Gin and tonic water in a gin glass. Lightly stir to mix. Place two scoops of sorbet in the gin-and-tonic mix. Garnish with a lemon slice and serve.

Note:

  • Use rose-flavoured sparkling water instead of tonic water for a less sweet version.
