Ingredients (12)

Fish
1 x 400 g box Sea Harvest Hake Burgers
Avo Smash
2 avocado
juice of 1 lemon
1/2 tsp salt
1/2 tsp black pepper
To Serve
4 seeded burger buns — sliced and buttered on both sides
200 g streaky bacon
1/4 cup mayonnaise
1 tbsp sweet chilli sauce
200 g feta cheese — crumbled
4 leaves butter lettuce
1 pineapple — peeled and sliced into wedges

Method:

Fish

Preheat the oven to 220 ºC.

Lay frozen Hake Burgers onto a baking tray. Place into the oven to cook for 25-30 minutes until crunchy. Alternatively, cook in an air fryer for the recommended time.

Avo Smash

Add the scooped avocado flesh, salt, pepper, and lemon juice to a bowl and roughly mash with a fork. Taste and adjust the seasoning if need be, then cover and set aside until ready to use.

To Serve

Toast the buttered buns in a dry frying pan over medium-high heat until golden brown.

Pan-fry or air fry the bacon rashers until crispy. Set aside until ready to use.

Mix the mayo and sweet chilli sauce together, then spread some on the base of each bun. Add a crispy Hake burger, then top with a spoonful of avocado smash. Add crumbled feta bacon rashers and a final drizzle of sauce. Close with the bun top and serve the burgers with fresh pineapple wedges for a sweet and savoury summer smash hit – yum!
