Curried mince in roti

Ingredients (9)

45 ml sunflower vegetable oil
1 onion — chopped
1 yellow pepper — cubed
2 garlic — cloves, crushed
500 g beef mince — lean
410 g tomatoes — chopped
400 g curry sauce
250 ml peas
6 rotis — store bought

Method:

Heat oil in a frying
pan, fry onion, yellow pepper and garlic, for 5 minutes.

Increase the heat, add
mince and cook for 5 minutes, until browned all over.

Stir in tomatoes and curry
cook-in-sauce, cook for 5 minutes.

Bring to the boil,
reduce heat to a simmer and cook for 15 minutes, stirring, until most of the
liquid has been absorbed.

Add peas and cook for
5 minutes.

Season to taste. Warm
roti and fill with the curried mince.

Wrap with tin foil or
shrink wrap before packing into lunch box.
