Avo mousse-filled cheat’s doughnuts

Ingredients (11)

Doughnuts
1 1/2 cup self-raising flour
1 cup Greek yoghurt
avocado oil — for brushing
Avo mousse
1 ripe avocado — blitzed until smooth
1/2 tin condensed milk
1 lime — zest and juice
1 pinch salt
1/2 cup cream — whipped to stiff peaks
Lime cardamom sugar
1/4 cup castor sugar
1 tsp ground cardamom
1 tsp lime zest

Method:

For the avo mousse: Mix the avocado, condensed milk, lime juice, zest together and salt together. Taste and adjust sweetness accordingly, add more condensed milk for a sweeter filling. Gently fold through the cream, transfer to a piping bag, and then store in the fridge.

For the doughnuts: In a mixing bowl combine the self-raising flour and Greek yoghurt to form a dough. Tip the dough out onto a floured surface and knead for about a minute until all the flour has been incorporated. Divide and roll the dough in balls, about 1 tbsp each in size.

Add the dough balls to an air-fryer basket, brush each dough ball with avocado oil and then air-fry at 180°C for 10-12 minutes until golden and crisp. Halfway through, be sure to give the basket a quick shake and brush with more avocado oil for the best results.

If you are using cardamom sugar, mix all the ingredients together and immediately transfer the doughnuts to the bowl with the sugar and toss while they are still warm.

Then gently stuff each doughnut with some of the prepared filling and enjoy!
