Wholewheat tuna pasta with cherry tomatoes and capers

Ingredients (9)

500 g pasta — whole wheat penne
2x 200 g tuna — tinned in oil
250 g cherry tomatoes — halved
1 Tbs capers — drained and finely chopped
2 Tbs red onion — finely chopped
1 tsp lemon — zest only
90 ml olive oil — extra virgin
90 ml lemon juice — fresh
sea salt and freshly ground black pepper

Cook the pasta according to packet instructions.

Drain and return to the warm pasta pot.

Add the tuna, tomatoes, capers, onion, lemon zest, olive oil and lemon juice and mix through well.

Season and serve immediately.
