Ingredients (6)

12 bread — sliced white
1 courgettes — grated
1 carrots — grated
200 g hummus
3 fresh tomatoes — sliced
100 g grated mature cheddar

Method:

Toast the bread on both sides. Mix the courgette, carrot and hummus, then spread over 4 toast slices.

Top each with another slice of toast. Top this with the tomatoes and the cheddar. Top with the remaining 4 slices of toast and serve with the essential Waitrose Ready Salted Crisps (optional).
