Ingredients (15)

1.00 onion — large, sliced
1.00 ml black peppercorns
1.00 ml cloves — ground
80.00 ml water
15.00 ml vegetable oil
1.00 cinnamon — stick
500.00 g mutton — cubed
15.00 ml fresh ginger — crushed
2.00 cardamom — pods, crushed
1.00 tomatoes — tinned and chopped
1.00 tomato paste — tinned
1.00 green chilli — chopped
2.00 sweet potatoes — peeled, sliced
0.00 sea salt and freshly ground black pepper
0.00 sugar — to taste

Place onions, peppercorns, cloves and water in a large saucepan and heat until boiling. Simmer until all water has
been absorbed.
Add oil and cinnamon, and braise until onions are golden.
Add meat, ginger and cardamom pods, stirring thoroughly.
Turn down heat, cover saucepan with a tightly fitting lid and simmer for 30 minutes.
Add tomatoes, tomato paste and chilli. Close lid of saucepan and simmer for 20 minutes.
Add sweet potatoes, salt, freshly ground pepper and sugar.
Replace saucepan lid and simmer until sweet potatoes are cooked.
Serve on creamed spinach with mushrooms and Yellow rice with raisins.
