Tikka beef burgers
|500 g||beef mince|
|45 ml||curry paste — tikka|
|35 ml||fresh coriander — chopped|
|salt and freshly ground black pepper|
|250 g||cherry tomatoes|
|1/2||onion — chopped|
|2||green chilli — chopped|
|15 ml||vinegar — red wine|
|15 ml||castor sugar|
|small handful||fresh coriander — chopped|
|to serve — to serve|
|4||bread — burger rolls, halved and toasted|
|1||red onion — cut into rings|
Add a little curry kick to your hamburgers for a departure from the ordinary.
1. Put the mince, curry paste and coriander in a bowl, season with salt and pepper, then mix well with your hands. With wet hands, shape into 4 burger patties.
2. Preheat a pan over medium-high heat. Brush the burger patties with oil and cook, turning once, for 15 minutes or until done.
3. Tomato relish: Heat the oil in a pan over medium high and fry the cherry tomatoes and onion for 5 minutes. Add the chillies, vinegar and caster sugar and cook for 15 minutes or until slightly thickened. Stir in the coriander and set aside.
4. To serve: Top the bottom halves of the buns with rocket, onion, rocket and the patties. Cover with the top halves of the buns and serve with the tomato relish and coleslaw.
