Tempeh “TLT” with kimchi and avo breakfast sandwich

Ingredients (9)

1 tbsp olive oil
tempeh — cut into thin slices
salt and black pepper — to taste
8 slices SASKO Low GI Cranberry Brown Bread
4 tbsp kimchi — plus extra to serve
1 avocado — cut into thin slices
1 medium tomato — cut into thin slices
1 handful lettuce

Heat the olive oil in a frying pan and fry the tempeh on each side until golden. Season with salt and black pepper just as they come out of the frying pan.

Assemble the sandwich by spreading a layer of mayonnaise on each slice of SASKO Low GI Cranberry Brown Bread.

Place kimchi on four of the mayo-topped bread slices, followed by the fried tempeh, sliced avo, sliced tomato and lettuce. Top with the remaining mayo-topped bread slices.

Serve with extra kimchi on the side and enjoy.
