Ingredients (12)

10.00 ml fresh coriander
400.00 g chicken breast fillets — poached, sliced
10.00 ml fresh ginger — minced
5.00 ml garlic — cloves, minced
10.00 ml lemon grass — finely sliced
5.00 ml fresh chillies — minced
125.00 ml honey — melted
500.00 ml broccoli — cut into florets
250.00 ml pepper — red and green, sliced
8.00 baby corn
2.00 spring onions — sliced
125.00 ml fresh mint — shredded

Combine drained chicken, coriander, ginger, garlic, lemon grass, chilli and honey in a bowl. Add broccoli, peppers, corn and onion. Chill for 1 hour. Toss lightly and serve sprinkled with mint.
Serves 4.
