Steak bruschetta with watermelon salsa

Ingredients (12)

2-3 spring onion — chopped
1 tomato — large, deseeded, chopped
1/2 pineapple — diced
2 red chillies — chopped
150 g watermelon — diced
fresh coriander — handful, chopped
salt and freshly ground black pepper
5 ml sugar
30 ml vinegar — apple cider
500 g steak
bread — baguette
230 g cream cheese — chive flavoured

Method:

1 SALSA

Toss all the salsa ingredients together.

2 VINAIGRETTE

Whisk the sugar with the vinegar until the sugar has dissolved.

Pour over the salsa and mix lightly.

Set aside.

3 TO SERVE

Season the steak with salt and pepper and fry in a hot pan for 5 minutes a side.

Set aside.

4 Slice the bread and spread some of the cream cheese on each slice.

Cut the steak into thin strips and pack on top of the cream cheese.

Spoon a little of the salsa on top and serve.
