Kolwyntjies
3 eggs — large
350.00 ml castor sugar
100.00 ml sonneblomolie
250.00 ml yoghurt
125.00 ml papaya
80.00 g droe klapper
250.00 ml flour — sifted
orange
lemon
Roomkaasversiersel
100.00 g butter
500.00 ml icing sugar
250.00 g roomkaas
10.00 ml lemon
5.00 ml lemon juice
2.50 ml vanilla — esesence

Method:

Oondtemperatuur: 180C
Pak eers kolwyntjiepapiertjies in ‘n muffinpan.

Klits die eiers en strooisuiker tot lig en romerig. Voeg die olie en jogurt by en klits weer goed.

Roer die papawersaad, klapper, bruismeel en sitrusskil by en klits tot goed gemeng. (Die beslag is loperig.)

Skep die beslag in die kolwyntjiepapiertjies en bak dit in die oond vir sowat 20-25 minute of tot gaar en goudbruin.

Maak die roomkaasversiersel:
Klits die botter en versiersuiker tot glad. Voeg die helfte van die roomkaas en die res van die bestanddele by en klits tot glad.

Voeg die oorblywende helfte roomkaas by en klits tot net gemeng. Moenie te veel klits nie, anders is dit te loperig. Bedek dit met kleefplastiek en sit dit in die yskas tot benodig.

Laat die kolwyntjies afkoel en versier dit dan met die bereide roomkaasversiersel.
