The saffron, mint and pomegranate jewels add major zing!
|1.2 kg||baby potatoes — cooked, peeled|
|2 tsp||cumin — seeds, toasted|
|6||red onions — chopped|
|15 g||fresh mint|
|100 g||pomegranate rubies|
|1/4 cup||fresh chillies — 573|
|1 pinch||saffron — soaked in hot water|
|lemon — halved, juice only|
|sea salt and freshly ground black pepper|
Halve the potatoes and place in a bowl with cumin seeds and salad onions. Mix together dressing ingredients and pour over potatoes. Toss well to combine.
Serve garnished with fresh mint leaves and pomegranate seeds.
