Wash and peel the potatoes with a potato peeler. Place the peelings in a shallow microwave dish and sprinkle with just enough oil to coat. Season to taste with the flavour enhancer, then arrange the peelings in a thin layer in the dish. Microwave for about 8-10 minutes on 100 percent power, stirring every 2 minutes. (The cooking time depends on the quantity of potato peelings, so cook for longer if necessary). The peelings are ready when they turn crisp and golden brown. Serves 4.
