Pasta Salad From Italy
Makes 8 small portions
Preparation Time 15 minutes
Cooking Time 12 minutes
- 1/2 packet pasta shapes of your choice
- 15ml olive oil
- 125ml mayonnaise
- 15ml tomato sauce
- 15ml white vinegar
- 3 medium-sized carrots, peeled and coarsely grated
- 1 stick celery, chopped
- 1 can of sweetcorn, drained
- 125ml cheddar cheese, cut into small cubes
- 2 spring onions, chopped
1 Cook the pasta until just tender. Drain. Drizzle with the oil and stir to coat. Set aside to cool.
2 Whisk the mayonnaise, tomato sauce, vinegar and a large pinch of sugar together. Pour over the pasta and stir well to coat.
3 Stir in the remaining ingredients and refrigerate until ready to serve. Add chopped ham, salami or drained tuna to the salad as variations instead of the cheese.
