Oat cookies

Ingredients (8)

85 ml butter — soft
175 ml castor sugar
1 eggs — large
275 ml flour — cake
2.5 ml Baking powder
5 ml cinnamon — ground
200 ml oats — rolled
120 ml pecan nuts — chopped

Combine all the ingredients in a large bowl and mix well.

Place spoonfuls of the mixture on greased baking trays and lightly press down, leaving space for spreading.

Bake in a preheated oven for 15 minutes or until golden. Remove from the oven and allow to cool before lifting the cookies off the baking trays and storing in an airtight container.

Make a choc-nut version of these cookies by leaving out the cinnamon and adding 5ml vanilla essence. Sprinkle with chocolate chips before baking and lightly press into each cookie.

For a peanut and cherry version, leave out the cinnamon and pecan nuts. Add 85ml crunchy peanut butter and 50ml chopped glace´ cherries.

To make raisin and sesame seed biscuits, omit the pecan nuts and add 50ml raisins and 15ml sesame seeds to the mixture.
