Nutty beef stir-fry

Stretch a steak with this simple stir-fry with cashew nuts and Asian flavours.

Ingredients (8)

20.00 ml peanut oil
40.00 ml soy sauce
10.00 ml curry powder
30.00 ml peanut butter — crunchy
300.00 g beef — sirloin, cut into strips
400.00 g stir-fry vegetables
50.00 g cashew nuts — toasted
30.00 g fresh coriander

Whisk the oil, soya sauce, curry powder and peanut butter together.
Heat a large frying pan over a high heat and add oil mixture.
When it starts to bubble, add the beef strips and vegetables.
Stir-fry over a high heat until cooked, but still crisp.
Add the nuts and season to taste.
Stir in the coriander if using and serve with noodles or rice.

For a vegetarian option, replace the beef strips with 200g cubed, smoked tofu. Serve on a bed of basmati rice.
