Ingredients (15)

1.50 kg beef — cubed
1.00 kg button mushrooms
500.00 g speck — diced
15.00 ml salt
5.00 ml black pepper — freshly ground
5.00 ml coriander — ground
2.00 ml nutmeg — whole, freshly grated
5.00 ml mushrooms — powdered
2.00 ml cloves — ground
2.00 ml dried thyme — ground
2.00 ml allspice — ground
125.00 ml vinegar — red wine
1.00 garlic — cloves, crushed
65.00 ml Worcestershire sauce
85.00 g sausages — casings

Mix beef with all ingredients except the sausage casings.
Place in a mincer and grind using a medium-coarse grinding plate.
Fill the sausage casings firmly but not too tightly with the meat mixture.
Grill or fry wors to your liking and serve on fresh chakalaka.
