|500 g||snowflake easymix chocolate muffin mix|
|2||eggs — extra-large|
|5 ml||vanilla — essence|
|60 g||butter — or margarine, melted|
|130 g||icing sugar — sifted|
|30 ml||cocoa powder|
|3 ml||vanilla — essence|
|dark chocolate — grated, to garnish|
Prepare the Snowflake Easymix Chocolate Muffiin mix as directed on pack, adding the vanilla essence to the wet ingredients.
Spoon mixture into mini paper cups, filling each about two-thirds full.
Bake in a preheated oven at 180°C for about 7 minutes. Turn out onto a wire rack to cool.
For the icing, beat the butter and icing sugar together. Add the remaining ingredients and beat to a smooth, spreadable consistency. Pipe the icing onto the mini cups and top with grated chocolate.
