|50.00 ml||fresh chives — chopped|

|100.00 g||mango — finely chopped|
|50.00 g||caviar — black|
|fresh chives — to garnish|
Pre-heat oven to 210 ºC.
Combine flour, sugar, salt and chives in a bowl. Rub in butter until mixture resembles breadcrumbs. Stir in just enough buttermilk to form a dough.
Roll out to 1,5 cm thick on a floured surface. Cut out 4 cm diameter scones with a biscuit cutter. Place scones on a baking sheet and brush with beaten egg.
Bake in pre-heated oven for 10 to 15 minutes.
Halve scones, top bottoms with crème fraîche, mango and a dollop of caviar. Garnish with snipped chives and top with tops of scones.
