Ingredients (17)

For the salad
3 cup raw sweet corn kernels
4 large nectarines — cubed
1 cup cucumber — cubed
1 red pepper — diced
1/3 cup red onion — finely chopped
1/2 cup fresh coriander — chopped
2 jalapeño pepper — seeded and finely chopped
sugar snap peas
radishes
baby cucumbers — cut into ribbons
baby gem lettuce
For the dressing
2 tbsp olive oil
2 tbsp lime juice
1 tbsp honey
1/2 tsp ground cumin
salt and black pepper
1 cup plant-based cream — Orley or coconut cream

Method:

Make the salad by combining all the ingredients together.

For the dressing, stir all the ingredients together, taste and adjust the seasoning.

Pour over mixed salad ingredients and enjoy.
