1. Boil the potatoes until soft. Add half the
peas and boil for a further five minutes.
Drain and mash until smooth. Stir in the
butter and season well with salt and
freshly ground black pepper.
2. Boil the remaining peas and corn in a
little water until cooked. Drain and stir into
the potato and pea mash. Serve hot.
