Malawian spiced chicken curry
|500 g||chicken — pieces|
|4 Tbs||vegetable oil|
|3||onions — large, chopped|
|5||tomatoes — peeled and chopped|
|2 Tbs||curry powder|
|1||green chilli — chopped|
|1 tsp||dried thyme|
|2 cup||stock — chicken|
|1 cup||potatoes — peeled, cubed|
|freshly ground black pepper|
Season the chicken pieces with the salt.
Heat the oil in a frying pan and fry the pieces until brown, then transfer to a large pot.
Pour off most of the oil in the pan, leaving about 2 tablespoons.
Sauté the onions until soft.
Add the tomatoes, curry powder, chilli and thyme.
After a few minutes, pour in the water and stock and bring to the boil.
Add the onion mixture to the pot with the chicken.
Simmer, covered, for 45 minutes over a very low heat.
Add the potatoes and cook for a further 15 minutes.
Season to taste with salt and pepper.
