Ingredients (4)

1.5 kg chicken — free-range
2 lemon — juiced and quartered
sea salt — flakes
black pepper — freshly ground

Method:

Preheat the oven to 200ºC.

Pour the lemon juice over the chicken, season with salt and pepper.

Stuff the chicken with the lemon quarters and roast for 1½ hours. Leave to rest for 20 minutes.
