Ingredients (9)

1/4 cup spekboom leaves
1/4 cup fresh lemon juice — plus 2 tbsp
3 large eggs
2 large egg
1 cup granulated sugar
2 tbsp lemon zest
1 tsp cornflour
1 pinch salt
150 g butter — cold and cubed

Method:

Place the spekboom in a blender with the additional 2 tbsp lemon and blitz until smooth.

Combine the spekboom, 1/4 cup lemon juice, eggs, egg yolks, sugar, lemon zest, cornflour and salt in a medium-sized pot and whisk to combine.

Place over medium heat and cook, stirring until the sugar has dissolved and the mixture is thick.

Add the butter, a few pieces at a time, whisking continuously until melted.

Continue to cook, stirring continuously, until the mixture is thickened and coats the back of a spoon.

Decant into a sterilised glass jar and cool before storing in the fridge.
