LCHF chia tiramisu

This has to be one of the tastiest LCHF recipes ever!

Ingredients (10)

Creamy layer
250 ml LANCEWOOD® Mascarpone Cheese — tub
1/2 cup cream
1 tsp vanilla — essence
vanilla — pod, seeds only
1 xylitol — or honey
Coffee layer
1/2 cup coffee — strong, cold
1/3 cup chia seeds
1/3 cup yoghurt — double cream
1 xylitol — or honey
30 ml cocoa powder — for serving

Method:

For the creamy layer, lightly whisk everything together until smooth. Do not over mix it.

For the coffee layer, whisk everything together until thoroughly mixed.

Add a dollop of the creamy layer to the bottom of 4 serving glasses. Sprinkle over a bit of cocoa powder. Add the chia mixture to form the second layer. Add more layers with the remaining filling and cocoa making sure you end with a creamy layer.  Garnish with a final dusting of cocoa powder.

Refrigerate for at least 20 minutes before serving.

Tip:

You can prepare this dessert 1 day and advance and store it in the fridge overnight.
