Honeyed chicken with sweet potato mash and gravy

45.00 ml orange — zest only
40.00 ml honey
4.00 chicken breast fillets
800.00 g sweet potatoes — peeled and cubed
350.00 ml instant gravy powder — chicken
2.00 garlic — cloves, crushed
20.00 g rocket — torn into pieces

Preheat oven to 180 ºC. Mix 25 ml orange rind into the honey and brush over the chicken pieces. Place in a greased roasting pan and bake in the oven for 30 minutes. Meanwhile, boil the sweet potatoes in a little water until soft. Remove from the heat and mash. Make up the instant chicken gravy according to packet instructions. Add 50 ml of the instant gravy and the garlic to the sweet potato mash. Stir in the rocket.
Once chicken is cooked through, place under a hot grill until golden and crisp. Stir the remaining orange rind into the chicken gravy and serve with the chicken and sweet potato mash. Serves 4.
