Grilled plum, coppa and rocket salad

Ingredients (12)

2 tbsp olive oil
1 tbsp balsamic vinegar
6 plums — pitted and quartered
150 g coppa ham — sliced
150 g wild rocket
3 balls buffalo mozzarella
100 g walnuts — toasted and chopped
for the dressing:
1/4 cup olive oil
1 tbsp balsamic vinegar
1 pinch dried chilli flakes
1 pinch castor sugar
sea salt and freshly ground black pepper

Heat a griddle pan until smoking hot. Whisk together olive oil and balsamic vinegar. Brush plums with the mixture and griddle for 2–3 minutes on each side. Season and set aside.

Place plums on a serving platter, toss together with coppa, rocket, mozzarella and walnuts.

For the dressing: Mix together dressing ingredients, pour over salad, and season well.
