8.00 chicken — pieces, large
salt and freshly ground black pepper
5.00 ml ginger — ground
oil — for frying
1.00 green pepper — deseeded and sliced into rings
60.00 g fresh ginger — grated
1.00 garlic — cloves, crushed
4.00 tomatoes — peeled and finely chopped
100.00 ml stock — chicken

Method:

Preheat the oven to 180 ºC (350 ºF). Season the chicken pieces with salt, pepper and ground ginger. Fry in heated oil until brown on the outside. Arrange in an ovenproof dish. Sauté the green pepper, garlic and fresh ginger in heated oil until soft. Add the tomato and chicken stock and simmer until the tomato forms a purée. Pour the sauce over the chicken, cover with aluminium foil and bake for 1 hour or until the chicken is tender and done. Serve on noodles flavoured with garlic butter and a green salad.
Serves 6-8.
