French toast with bacon and fried banana

Ingredients (10)

250 g bacon — shoulder
4 bananas — sliced
6 eggs
60 ml milk
3 Tbs fresh chives — chopped
salt and freshly ground black pepper — to taste
5 ml butter
15 ml oil
8 - 10 bread — sliced white, toasted
maple syrup — to serve

Put the bacon under the grill until crispy. Heat up a non stick pan and grease lightly. Fry the banana until golden on both sides. Remove and set aside.

Beat the eggs, milk and chives together and season. Add the butter and oil to the pan and heat until bubbling.

Dip 2 – 3 slices of bread in the egg mixture and fry over moderate heat until golden on each side (about 30 seconds a side). Remove and place on paper towel and fry the rest. Keep the others warm by placing in a warmer drawer or a low oven.

Cut toasts in half on the diagonal and pile onto plates with a generous amount of bacon, banana and a good drizzle of maple syrup!
