Ingredients (9)

6.00 eggs — large
45.00 ml milk
0.00 sea salt and freshly ground black pepper
410.00 g baked beans — tinned
8.00 bread — white, slices
1.00 spring onions — a bunch
15.00 ml oil
2.00 red peppers
0.00 fresh chives — to garnish

Beat eggs, milk and seasoning together in a large bowl.

Spread the baked beans over 4 slices of bread. Sprinkle with the sliced spring onions. Press the remaining slices of bread over the beans to make sandwiches.

Dip sandwiches into the egg mixture, coating well. Set aside and allow egg to soak in for 5 minutes.

Heat oil in a large frying pan and fry sandwiches one at a time for about 3 minutes on each side until golden brown.

Slice sandwiches in half diagonally and serve with slices of roasted red pepper on the side.
Garnish with fresh chives.
