Diabetic-friendly chocolate and berry squares

Ingredients (15)

190 ml flour — cake
2.5 ml baking powder
2.5 ml bicarbonate of soda
2.5 ml cinnamon — ground
2 ml mixed spice — ground
45 ml cocoa powder
10 ml orange — zest only
1 eggs — large
125 ml sugar — replacement, xylitol
5 ml vanilla — essence
100 ml fresh or frozen berries — extra, decorate
150 ml courgettes — finely grated
CREAM CHEESE ICING:
125 ml cottage cheese — fat-free, smooth
30 ml sugar — replacement
2 ml orange — zest only

Method:

Preheat oven to 180°C.

Prepare a 20cm square baking tin with cooking spray.

Sift the flour, baking powder, bicarbonate of soda, spices and cocoa together. Add the orange zest.

In another bowl, combine the egg, sugar replacement and vanilla essence together and mix well.

Add the egg mixture, berries and grated courgette to the dry ingredients, mixing until just moistened.

Spoon the mixture into the prepared tin and bake in a preheated oven for 20 to 25 minutes or until a skewer inserted comes out clean. Remove from the oven and cool in the tin. Invert onto a cooling rack. Cut into squares.

Icing:
Mix the cottage cheese, sugar replacement and orange rind together. Spoon onto each square. Decorate with berries.
