Crispy cheesy chicken quesadillas

For the chicken
|500 g||chicken breast fillet — cubed|
|2 tbsp||Mochachos spice mix — for chicken|
|2 tbsp||lemon juice|
|1/3 cup||Mochachos sauce|
|handful||lettuce — shredded|
|handful||cheese — grated|
Tap for ingredients
Cook the cubed chicken with mochachos spice mix, lemon and mayonaise on a low heat until tender.
Add mochachos sauce sauce and simmer for 3-5 minutes.
Lightly spread a tortilla with mayonnaise.
Sprinkle some shredded lettuce on half of the tortilla, then top with the saucy chicken and lastly grated cheese.
Toast both sides in a non stick frying pan with some olive oil untill golden and crispy.
